meredithleo: Your breakfast looks amazing! How much avocado do you use? Do you have a trick for keeping the rest from turning brown?

I use half an avocado. So Monday I take a whole avocado to work, slice it down the middle, and use the half without the pit. Then I wrap the remaining half in saran wrap and put it in either a ziplock baggie or a small container with a lid (whichever I remember to bring). Then Tuesday I usually have to just scrape the surface of the avocado after I remove the pit because I almost always have a little brown where the skin meets the part you eat (if that makes sense). Repeat on Wednesday, etc.

I grew up in Kansas, so I definitely had to worry about when fruits and vegetables were in season. Living in LA, I completely forget that’s a thing (I feel spoiled). This week, roma tomatoes are $0.99 per pound (and avocados are $0.47 each) and they look even better than they did all last year!

Trust me. My entire workday is eyeroll.com central. These are the same people who think Lean Cuisine’s are the way to lose weight, then wonder why they aren’t losing weight since they are supplementing said Lean Cuisine’s with McDonald’s. I tried to explain the concept of “healthy fats” one day when someone told me avocados are “bad” for me, and she goes “so French Fries would be healthy fats since a potato is a vegetable, right?” I just find it easier to not really interact with a lot of people at work because I’m sure if I started to actually interact with them, I’d get fired for being such a bitch.
